For example butterflies imitate poison berry, some insects imitate large eyes so predators are afraid of them, others develop poison-repellent which affects only specific predator species. How can a stupid animal evolve these accessories? How genes know that particular drawing will be such similar to real thing?

I think I can see how a predator can evolve new things to attack prey, but how does the prey evolve traits before it becomes extinct? If they need a defense like camouflage, it seems like they would go extinct before they evolved that trait.
